Our Story

Hi, we are the Joneses!

We are a British – Thai family who enjoys eating good food and are passionate about cooking. They both form a large part of our family life.  Since Cherie first took a job at The Melia, 4-star hotel in Central London – introducing her to more formal cooking techniques, food safety, and the pairing of soft and alcoholic drinks with food – Cherie has wanted to one-day work in the food industry … and that day has arrived!

Cherie has been teaching Thai cooking & offering Private Chef services since 2018. The healthcare lockdowns of 2020 and 2021 have sadly stopped this, but we’re as determined as ever to bring wonderful flavours to everyone. And so, Flavours By Jones was born!

Our Thai Cooking Story

Cherie took her development as a chef seriously and has trained professionally at:

M.L. Puang Dinakara The Royal Exquisite Thai Cooking School in Bangkok, which is accredited by the Thai Minister of Education and the Thai Minister of Labour. She is specialised in Thai cookery and Thai Restaurant Management outside Thailand.

​

LEITHS School of Food and Wine (London) for new cooking skills and an elevation to the professional level. Cherie passes this knowledge and cooking techniques along to her students that join her for Thai cooking classes. This helps people to properly learn the skills to cook Thai food by themselves with confidence.

Our Macarons Story

​

Whilst studying at Leith’s, Cherie discovered meringue and immediately fell in love with how tasty it was; fascinated by these little crispy and chewy morsels which were sweet and light. It was an amazing experience.


The love of making macarons – little sweet sandwiches of joy – came out of necessity: we couldn’t find them anywhere local. During lockdown we couldn’t travel anywhere to get them either and so the Joneses decided to start making them in their own home kitchen studio which we registered with Mid-sussex Council with 5 Star Hygiene rating.

 

There are no shortcuts when making delicious macarons, including the choice of ingredients. Organic products (when possible) and fresh eggs sources locally – Macs Farm in Ditchling – come together well. Making them requires many French patisserie techniques and we’ve found the process both challenging and rewarding. The focus needed to learn the techniques kept us going during the first pandemic lockdown. And so we want to share these delights with everyone and allow you to buy macarons online.

We incorporate some of the finest techniques to produce a truly French macaron and Cherie has been heavily inspired by Pierre Hermé – the French macaron king. Our customers have commented how our macarons illicit memories of holidays in France and there is surely no greater compliment than that.

In addition to Thai food, Cherie also loves cooking Chinese and Japanese cuisine. At the beginning of 2019, Cherie won a place from “Lee Khum Kee – Love Home Taste Chinese New Year Competition” to attend a Master Class with the legendary Chef Ken Hom, the world’s most famous Chinese Chef. Her dish had been chosen by Chef Ken Hom himself as part of the competition.  

 

At the Masterclass, Cherie learnt new wok and Chinese cooking skills through preparing dishes such as Savoury Duck with Oyster Sauce and Vegetarian Dan Dan Noodles. It was such a great experience.​
